A mortar and pestle does something a spice grinder can't: it bruises rather than shreds, releasing oils instead of heat. Toasted cumin, garlic crushed to a paste with salt, basil for pesto — the texture is better, and you can stop exactly where you want.
Olive wood is unusually hard, which is what makes it work here; softer woods dent and absorb. The pestle has a wide grip for control and a broad, round head that presses evenly against the bowl.
